Throumba Thassou Olives

The throumpa olives are of small fruit, unique for their ability to debitter on the tree as they mature and get aeruginosa colour. The trees grow in Attica, Viotia, the Aegean islands and Crete. The shape of the fruit is cylindrical with a slight incline.
A variation of throumba olives grows in Thassos, but does not debitters on the tree. It is used for the production of olives that get dehydrated in salt.
